Unraveling fusion twists at Bubbakoo’s Burritos: New Paltz’s new spot for delicious inspired Mexican cuisine.
Located in New Paltz, N.Y. is Bubbakoo’s Burritos. This famous franchise opened up a new location in New Paltz this year. Cofounders Paul Altero and Bill Hart opened their first location in 2008 in Point Pleasant, N.J. and have grown enormously since. Bubbakoo’s Burritos features a wide array of food, including burritos, tacos, quesadillas, tostada salads, burrito bowls, burritodillas, nachos, curly fries, chips and dips, wings, sweet treats and their famous chiwawas.
For this week’s Weekly Special, we are showcasing their flavorful burritodilla. Now you might be wondering, what is a burritodilla? A burritodilla is a perfectly curated combination of a burrito and a quesadilla. With all their entrees you can custom make it to your desire. You can add protein, signature sauces and a variety of toppings. For my signature style burttitodilla, I decided to add an abundance of fresh flavors, including carnitas (pork), fluffy white rice, creamy pinto beans, corn salsa and fajita veggies, which consist of sauteed onions and peppers, fresh cilantro and diced onions infused with a burst of freshness, along with a crisp layer of shredded lettuce. The whole creation was brought together by melted cheese and topped with their signature guacamole, making every bite a delicious blend of different flavors.
If you’re craving something with a bit more crunch, their menu offers one of their unique specialties, chiwawas. Their chiwawa is a rice ball, its core oozing with melted cheese, coated in a light, crispy panko crust. This golden, crunchy exterior contrasts beautifully with the warm, gooey center. The rice ball is loaded with rich, creamy queso cheese, adding depth to each bite. You can additionally customize it further by choosing your preferred protein and a wide range of toppings.
Not only do they have a large variety of entrees, but their dessert menu is every sweet lover’s dream. Dive into their boardwalk cookies, where deep-fried Oreos dusted with powdered sugar truly come alive with your choice of 3 sauces: maple syrup, caramel, or raspberry. For a lighter sweet treat, look for their love chips: crispy flour tortillas dusted with powdered sugar and drizzled in caramel or raspberry syrup. Don’t miss the chocolate chip cookies, a warm and gooey classic delight, or the rice crispy treats, the perfect mix of chewy and crispy textures combined.
